On 30th April our teacher Mrs Ward organised for chef, Jordan Sclare, now Executive Chef at Chotto Matte Restaurant and formerly at the Michelin Star Nobu, London, to come in last week and compete in a masterclass in Nikkei cuisine.
I had never heard of this cuisine and was interested to learn that Nikkei cuisine is a mixture of Japanese and Peruvian food that started when some Japanese travellers settled in Peru. Jordan and his Head Chef Michael explained what it was like to work in a high quality restaurant; and then the masterclass commenced.
We watched Jordan and Michael prepare two dishes and worked alongside them to produce our own dishes to take home. They guided us through the recipes showing us ‘cheffie’ ways to complete the tasks which was great fun.
We made salmon tataki, anticucho salsa which used sweetcorn and Peruvian popcorn as part of the salsa and chicken teriyaki, nasu miso puree, which used fried aubergines which we pureed as a base for the chicken. The dishes tasted amazing and they all looked great when we finished.
We all had a good time, learnt a lot, practiced skills and it was great inspiration to know that with hard work you can go far, Jordan was an ex student of Mrs Ward so on behalf of the students involved, I give thanks to Mrs Ward, Jackie, Michael Paul and of course the amazing Jordan Sclare.
